Brussels Sprouts and Arugula Caesar Salad

Looking for the perfect side dish to complement your favorite pasta or impress at this year’s holiday parties? This Brussels sprout salad is a delicious and nutritious option that’s sure to be a hit! Packed with vitamin C and rich in antioxidants, Brussels sprouts also provide about 3 grams of fiber per cup, making this a healthy and flavorful addition to any menu.

True or False: Arugula is closer in relation to cabbage than spinach.

True! Although arugula looks like a salad green, it is actually a cruciferous vegetable!

 

Ingredients

4-5 oz. Brussels sprouts, thinly sliced or grated
1-2 oz. arugula (1 heaping cup)
½ Tbsp. Dijon mustard
¼ tsp. black pepper
1 medium lemon, zested and juice reserved
¼ cup grated Parmesan cheese
2 Tbsp. extra virgin olive oil

 

Method of Preparation

1. Add Brussels sprouts and arugula to a large bowl and mix to combine. Set aside.
2. To make the dressing, whisk Dijon mustard, black pepper, lemon zest, lemon juice, and Parmesan cheese until smooth, about 1 minute. While stirring, slowly pour in the extra virgin olive oil and
continue to whisk until dressing is creamy and emulsified, about 1-2 minutes more.
3. Add a small amount of dressing to the salad bowl and toss. Continue to add small amounts at a time to avoid over dressing or serve on the side.
