Spinach and Tomato Muffins

These Spinach Tomato Muffins, made with Health One Pancake/Baking Mix, combine the goodness of fresh spinach, sun-dried tomatoes, and creamy goat cheese. Baked to perfection, they’re a delicious, protein-packed snack or breakfast option at just 205 calories per serving!

Ingredients

  • 2 packets Pancake/Baking Mix Health One
  • 1 egg white
  • 1 teaspoon garlic (finely diced)
  • 2 tablespoons goat cheese
  • 2 tablespoons sun-dried tomatoes
  • 1/4 cup fresh spinach – chopped, or 1/4 cup frozen – thawed and drained
  • 1 tablespoon scallions (chopped)
  • 1/2 cup water

Instructions

1. Preheat oven to 350 degrees.

2. Combine all ingredients and spoon into muffin tins.

3. Bake for 15-20 minutes depending on the size of the muffin tins.
