Ingredients
- 2 packets Pancake/Baking Mix Health One
- 1 egg white
- 1 teaspoon garlic (finely diced)
- 2 tablespoons goat cheese
- 2 tablespoons sun-dried tomatoes
- 1/4 cup fresh spinach – chopped, or 1/4 cup frozen – thawed and drained
- 1 tablespoon scallions (chopped)
- 1/2 cup water
Instructions
1. Preheat oven to 350 degrees.
2. Combine all ingredients and spoon into muffin tins.
3. Bake for 15-20 minutes depending on the size of the muffin tins.
