These flavorful Garden Pancakes, made with Health One Pancake/Baking Mix, shredded zucchini, and Monterey Jack cheese, are a delicious way to enjoy a savory breakfast. Topped with a fresh, homemade tomato sauce, they’re a light yet satisfying meal packed with veggies and flavor!

Ingredients

  • 1 packet Pancake/Baking Mix Health One
  • 1 tablespoon Monterey Jack Cheese (shredded)
  • 1/4 zucchini (shredded)
  • 1/2 teaspoon garlic (chopped)
  • 2 teaspoon onion (chopped)
  • 1/4-1/2 cup water (for desired thickness)

Tomato Sauce

  • 1/2 cup tomatoes (chopped)
  • 1 teaspoon onion (chopped)
  • 1 teaspoon basil (chopped)
  • 1/2 teaspoon garlic (chopped)
  • 1/2 teaspoon olive oil salt and pepper (to taste)
  • Dash Balsamic vinegar

 

Instructions

1. Mix all ingredients together. Pour onto non-stick pan. Cook for 2 minutes.

2. Flip and cook for another 2 minutes. Serve and top with tomato sauce (adds 36 extra calories).
