Shirazi salad is an Iranian salad that originated from and is named after Shiraz in southern Iran. A relatively modern dish, dating to sometime after the introduction of the tomato to Iran at the end of the 19th century.
Tomatoes are the richest source of lycopene available to us naturally. Lycopene is a very powerful antioxidant which is important for the health of the prostate gland in men. It’s also what gives red and pink fruits their color. Tomatoes, watermelons and papayas are all colored with lycopene.

½ cup finely chopped red or yellow onion |
3 Tbsp. cilantro, chopped |
Method of Preparation
1. Place onions in bowl and top with lime zest if using and lime juice and a pinch of salt. Stir to combine.
2. Add tomato, cucumber, parsley, cilantro, dill, and dried mint on top of the onion and do not stir. Let sit for 5-10 minutes to allow onions to pickle slightly.
3. Add salt and pepper to taste, beans, and olive oil to the bowl. Toss to combine and serve.
