Ingredients

¼ cup ground flaxseed

½ cup water 


3 cups all-purpose flour 


2 Tbsp. baking powder 


Zest of 1 orange


2 tsp. ground cinnamon 


1 cup ground walnuts

1 ⅓ cup olive oil

1 cup granulated sugar

1 tsp. vanilla extract

½ tsp. baking soda

1 ⅓ cup orange juice

Powdered sugar for garnish, optional

Shredded coconut for garnish, optional

  1. Preheat the oven to 350°F and grease a 9”x13” baking dish with cooking spray.
  2. Make the flax egg by combining the flax seeds and water in a small bowl. Set aside.
  3. Combine the flour, baking powder, orange zest, cinnamon and walnuts in a medium mixing bowl and whisk together. Be sure to zest the orange prior to juicing.
  4. In a separate large mixing bowl, combine the oil, sugar, vanilla extract, flax egg, and whisk together.
  5. Add the baking soda to the orange juice and mix; add to the wet ingredients and whisk.
  6. Add the dry ingredients to the wet ingredients in a few batches and whisk until just combined. Do not overmix. If the batter is too thick, add ¼ cup of water.
  7. Transfer the batter to the prepared baking dish.
  8. Bake on the center rack for about 35 minutes or until springy to the touch. A toothpick inserted into the cake should come out clean.
  9. Cool completely and dust with powdered sugar and/or shredded coconut if desired.
