Thai Chicken Satay

Chicken satay is a popular Southeast Asian grilled skewer dish that delivers big flavor while providing a lean protein boost.

 

Ingredients

8 long wooden skewers
4 oz. reduced sodium soy sauce or tamari
1 Tbsp. vegetable oil
2 tsp. sesame oil
1 oz. rice vinegar
2 tsp. chili sauce
½ cup brown sugar or coconut sugar
2 cloves garlic, minced

1 fresh lime, juiced and zested
2 tsp. dried ginger
2 tsp. onion powder
½ tsp. black pepper
1 tsp. turmeric
1 tsp. coriander
1 Tbsp. sesame seeds
2 lb. boneless and skinless chicken thighs

Method of Preparation

1. Soak wooden skewers in water until ready to make chicken skewers.
2. Except for the chicken thighs, mix all other ingredients into a large bowl. Set aside marinade.
3. Remove excess chicken fat from thighs and cut lengthwise into ¾” strips. Add to marinade and fold gently. Allow the chicken to marinate for at least 20 minutes before skewering.
4. Pre-heat grill to medium high heat.
5. Skewer 2 to 3 chicken strips onto a wooden skewer. Place on roasting rack on top of sheet pan with parchment.
6. Place remaining marinade into small saucepan and simmer for 4 minutes. Set aside for glazing.
7. Place the chicken skewers at 45° to grill and allow ends to extend beyond grill to ensure they don’t burn. Monitor and turn over when pronounced grill marks are present on chicken. Cook for another 2 minutes.
8. Remove chicken from grill and apply cooked marinade with pastry brush generously on both sides of chicken and sprinkle with sesame seeds. Place into a 400°F oven and cook until chicken is 165°F. Keep warm until service.
