3 medium sweet potatoes |
⅓ cup canned black beans |
Method of Preparation
1. Preheat the oven to 450°F.
2. Slice sweet potato into ¼ inch discs.
3. In a large bowl, toss together the sweet potatoes, oil, paprika, chili powder, and garlic powder.
4. Line a baking pan with aluminum foil.
5. Spread the sweet potato mixture in a single layer in the baking pan.
6. Bake for 10 minutes. Using a spatula, turn over the sweet potatoes. Bake for an additional 10 minutes or until tender and slightly browned.
7. Remove the pan from the oven.
8. Sprinkle the black beans, diced tomatoes and cheddar cheese over the sweet potatoes.
9. Bake for 2 minutes, or until the cheddar cheese melts.
10. Serve with sliced avocado
