Enjoy these warm, cheesy Cheddar Zucchini Muffins made with Health One Pancake/Baking Mix. Packed with protein, veggies, and a hint of garlic, they’re perfect for a nutritious snack or a savory breakfast on the go!

Ingredients

  • 2 packets Pancake/Baking Mix Health One
  • 1 egg white
  • 1 teaspoon garlic (finely diced)
  • 2 tablespoons low-fat cheddar cheese
  • 1/2 cup zucchini (shredded)
  • 1 green onion (scallion) (finely chopped)
  • 1/2 cup water

Instructions

1. Preheat oven to 350 degrees. Combine all ingredients and spoon into muffin tins.

2. Bake for 20 minutes.
