Ingredients
- 2 packets vanilla Health One
- 1 packet Pancake/Baking Mix Health One
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1 1/2 teaspoon vanilla extract
- 1 tablespoon lemon extract
- 1/2 cup water
- 1/2 teaspoon poppy seeds
Instructions
1. Heat oven to 350 degrees. Use a mini-muffin tin for 12 muffins and spray with cooking spray.
2. Pour Health One into large bowl. Add in both extracts and lemon juice. Mix well. Add water to desired consistency. Mix well and add lemon zest. Add poppy seeds and mix.
3. Pour mixture into mini-muffin tin. Bake for about 9 minutes.
